Potato prepared in any of its variations never disappoints! Potatoes taste great when baked and taste even better when fried. So, why not bake 'em and fry 'em!

Potatoes Baked n Fried

Back in the days when I came to US, I lived with roommates. We would take turns to cook every day. Given that I had never cooked before, first time on my turn I cleverly chose to make potato fry. Growing up eating only potatoes, I knew potato prepared in any of its variations never disappoints. With my trust in potatoes I made potato fry with onions and tomatoes. And to my surprise my roomies really liked it.

Potatoes taste great when baked and taste even better when fried. So I thought why not bake ‘em and fry ‘em. That would give it the flavor and taste from both the worlds!

This is a simple, earthy and non pretentious dish. Cut potatoes sprinkled with oil, seasoning and baked. Then, fried with caramelized onions to give it a sweetened flavor. Just a little bit of seasoning enhances and brings out the taste of potatoes and at the same time does not over power the dish. The aroma from the seasoning, flavor of the potatoes and the mild sweetness of the caramelized onions all together make it a lip smacking dish.

Baked n fried Potatoes


Makes: 2 servings

Potatoes- 3 medium
Onion- 1 medium
Coriander Powder- 1-2 Tbsp
Chili Powder- 1-2 Tbsp
Garlic- 2 cloves
Mustard seeds- 1tsp
Oil- 3 tbsp
Salt- to taste

Pre-heat oven to 350F.

Slice potatoes as desired and spread on lightly greased baking sheet.

Sprinkle coriander powder, chili powder, salt and some oil.

Adjust the quantity of seasoning to your taste. For me, spicy the better!

Toss the potato slices to coat the seasoning evenly.

Bake in the oven for about 25- 30 minutes.

If you are lazy or tight on time, you can skip baking and go straight to frying it with onions.

Heat oil in a skillet, add mustard seeds and garlic.

Stir until the mustard seeds splutter and garlic flavors the oil.

Add chopped onions and fry until they are soft and translucent.

At this point, add the baked potatoes to the skillet and stir for few minutes till it all combines.

Taste and add salt or seasoning if necessary and stir well.

Remove from heat,garnish with cilantro and serve.
