A cold day, on the couch, in front of TV with a bowl of warm chocolate cake and vanilla sauce, just can’t say how comforting it is. Chocolate is the flavor of the season, don’t you think? Anything chocolate feels warm and comforting as a giant bear hug!

Chocolate Cake

I have played quite a bit with chocolate cakes trying to bake the perfect one! This chocolate cake is as simple as combining sugar, eggs, buttermilk, chocolate and flour! It also has a simple appearance, no fancy frosting or colorful icing, just dusting of powdered sugar. This is for sure one of the best chocolate cake.

It has an intense chocolate flavor that is truly decadent and the dose of brewed coffee emphasizes the chocolaty flavor more. Buttermilk gives the cake a texture that is super soft and moist. Every piece of this chocolaty goodness will just melt in your mouth. The combination of chocolate cake with vanilla sauce is just heavenly!

Chocolate Cake

Dry Ingredients Wet Ingredients
All purpose flour- 2 cups Chocolate Morsels- 1 cup
Cocoa Powder- 2/3 cup Eggs- 2
Sugar- 2 cups Buttermilk- 1 cup
Baking Powder- 1 tsp Vegetable oil- 1/2 cup
Baing Sodea- 1 tsp Vanilla Extract- 2 tbsps
Salt- 1 tsp Brewed Coffee- 2-3 tbsps

Pre-heat oven to 325 F.

Start by mixing all the dry ingredients in a bowl. You can use a sieve to mix them uniformly or you can just mix them with a whisk like I do!

In another bowl, beat eggs until frothy.

Add oil, buttermilk, brewed coffee, vanilla extract and beat for a bit to mix them all together.

If you don’t have a coffee brewer, you can mix 2-3 teaspoons instant coffee powder in quarter cup of warm water.

Melt the chocolate morsels in a microwave or using double boiler method. Add the melted chocolate to the batter.

You can use any milk chocolate bar instead of chocolate morsels. To uniformly melt the chocolate bar, chop the bar into small pieces before melting it.

Now, add the dry ingredients little by little and mix until no more flour is uncovered. Do not over mix the batter after adding the flour or it will result in a tough rubbery cake.

We are now ready to bake!

Chocolate Cake

Butter a cake pan and pour the batter into it.

Bake in the oven for 20 to 30 minutes or until it is done.

To check if it is done, prick a tooth pick or small knife in the middle of the cake. If it comes out clean, Whoa-la, the cake is done. If not let it bake for another 5 minutes and check again.

Turn off the oven, remove the cake and cool it on a rack.

Now comes the best part of the whole process, EATING!!!!!!!!

Cut a piece of cake, place it in a bowl and serve with warm vanilla sauce.
